Both culinary courses and courses in business can be valuable for opening a bakery, restaurant, hotel, or just climb up the ladder in the F&B industry and handle a leadership role, as culinary and business provide different skill sets.
In its MS in Culinary Arts, Collége de Paris can provide you with the hands-on experience and technical skills needed to excel in the kitchen and create delicious, high-quality food. In this same program, collége de Paris can equip you with the knowledge and skills including finance, marketing, operations management, human resources, and performance management (to name a few) to run the business side of a bakery, restaurant, as an executive chef, an F&B Consultant, etc.
I see this curriculum as the best approach as it combines both sets of skills. This dual approach can give you a strong foundation in both the culinary and business aspects of running your department or your own business and increase your chances of success.
When I first applied and then got accepted into the program, it was mentioned that we have to attend 2.5 days of classes per week, while having 2 days of classes per week for 2 terms.
I'm currently committing to 4 days instead and I find that this poses challenges for professionals managing projects and deadlines (in my situation). The structure of having four days of courses in consecutive weeks can be inconvenient and may disrupt other scheduled commitments.
Aside from the scheduling concerns, I must commend the administration, staff, and academics for their professionalism and support. They strive to ensure that everyone is having a good MS journey.
